Beef Barley Soup



This soup was delicious and so easy to make. The recipe and picture is from allrecipes, however I changed it a bit to fit veggies my family loves.


Beef Barley Soup Recipe
  • 1 cup mushrooms
  • 1 zucchini
  • 1 bok choy
  • 1 large potato
  • 5 cups beef broth
  • 5 cups water
  • 2 cups chopped stew beef
  • 2 (14.5 ounce) cans diced tomatoes, undrained
  • 1 cup quick-cooking barley
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano

1. Add broth, water, uncooked beef, barley, and chopped up potatoes in a large saucepan. Bring to a boil and then let simmer for about 1 hour. 
2. Add the rest of the vegetables, diced tomatoes, salt, pepper, dried basil, dried oregano. Let simmer for approximately 30 more minutes, stirring occasionally.
